Retail and hospitality display fridges are particularly prone to icing because their doors are opened constantly throughout the day, letting in warm, moisture-laden air that then condenses and freezes on the coldest surfaces inside. Some frost is completely normal between defrost cycles, but heavy or fast-building ice usually points to something specific going wrong.
Left unaddressed, icing reduces the shelf space available for stock, restricts airflow further, and can eventually stop the unit holding temperature at all.

What typically causes it

What staff can check day to day
Check door seals for tears, gaps, or a poor close, and wipe them down regularly since food debris on seals prevents a proper seal. Make sure stock isn't stacked against the back panel or evaporator, since manufacturers specify clearance for a reason, and note whether ice is building evenly or concentrated in one area, as that detail helps with diagnosis.
Why a stuck defrost cycle needs an engineer
If the defrost heater, timer, or terminating thermostat has failed, the unit will keep running its cooling cycle without ever properly clearing accumulated frost, and ice will build progressively worse over days. Confirming which of these components has failed needs the unit's control panel accessed and tested, which isn't something to attempt without training given the electrical and refrigerant components involved.
